As I lately have a little time, I was browsing on the web last week. Attempting to find new, intriguing thoughts, inspirational dishes that We have never tried before, to astonish my family with. Hunting for a while yet couldn’t come across too many interesting stuff. Right before I thought to give up on it, I discovered this fabulous and simple dessert simply by chance. The dessert looked so tempting
on its photo, that required urgent action.

I had been tweaking the initial mixture create it for the taste of my loved ones. I must say it absolutely was a terrific success. They enjoyed the flavour, the overall look and enjoyed having a sweet like this in the midst of a lively workweek. They basically asked for lots more, a lot more. Hence next time I am not going to make the same miscalculation. I am likely to twin the amount .
This Lemon Curd is from SunCakeMom.
Pour a cup of water in a medium size saucepan and place it on the cooktop to boil.
Grate 1 lemon’s zest.
Squeeze 4 lemon to get the juice.
Separate eggs as we only need the yolks.
Put yolks into a metal mixing bowl.
Pour the juice, lemon zest, a teaspoon of stevia or sweetener of choice and a pinch of salt into the mixing bowl as well then mix it together.
Turn cooktop to low heat and place the mixing bowl on top of the simmering water.
Whisk yolks continuously until completely blended and keep whisking it as the curd cooks and becomes thick. It takes about 5 minutes.
Remove mixing bowl from the heat and wait for a couple of minutes to cool then put butter into the curd as well.
Whisk them together. Try for sweetness and add more sweetener if desired. It shouldn’t look like this:
Pour curd into a jar or a bowl to store it in a cool place.
Use it with sweet scones, muffins, pancakes, doughnuts, pound cakes or biscuits.
